Flying Monkey Espresso
This espresso is extremely balanced, but playful, ranging from a deep cocoa and cardamom body to a candied, clementine sweetness. The components marry together to create a beautiful harmony of flavors while still having enough depth to play nicely with milk.

Southpaw is a well rounded expression of much of what we have come to enjoy and require of a house espresso. Much of the challenge in creating a “balanced” daily use espresso is achieving a complex and sweet flavor profile in a straight shot that will manage to have enough body to punch through in milk based beverages. FINCA SANTA MARIA
Located at over 1850 meters near the municipality of Buesaco in the Nariño department of Colombia lies Finca Santa Maria. This caturra variety is processed on the farm using the traditional washed method.

Bolivia Senda Salvaje
This beautiful cup has a delicate floral aroma that opens up with a honeysuckle flavor and syrupy body when brewed. A tangerine sweetness and bright acidity mellow with hints of cocoa nib.

Bolivia Senda Salvaje - Experimental Lot
This is an experimental lot that we collaborated on with Carmelo and Rene. We requested coffee from a lot with very specific growing conditions, then asked that it be double-soaked and dried on raised beds, also known as Kenya Process. Read in more detail below.

Bolivia Tres Estrellas
The Tres Estrellas cup has a rose-like aroma, round body, and flavor of roasted almonds. The delicate acidity lends to a red apple sweetness that lingers on the tongue.

In 1969, three friends and entrepreneurs decided to start farming coffee in Brazil, on the shores of Furnas Lake. Today, they continue to expand and improve coffee growing and processing in Brazil.

CERRO LAS RANAS - La Gran Reserva
The bourbon variety from Cerro Las Ranas is grown at 1700 meters in the Apaneca-Ilamatepec region of Western El Salvador. The La Gran Reserva is a single-estate blend comprising of 3 different processes; washed, natural and pulped natural all grown on the farm Cerro Las Ranas.

FINCA VILLA LOYOLA
About 2 km from the municipality of Chachagui in the Nariño department of Colombia lies Finca Villa Loyola. Their caturra variety is grown at over 1800 meters and is washed and processed directly on the farm.

FINCA EL VALLE
The Bourbon variety from Finca El Valle is grown high in the mountains near the El Agua Volcano in Antigua at nearly 1600 meters. Following the harvest, the coffee cherries are washed and processed on the farm. The Gonzalez family, producers of Finca El Valle are a PT's Coffee Direct Trade Partner.

Finca San Francisco Natural El Salvador
This natural processed coffee from Jose Antonio Salaverria features chocolate notes throughout the cup with a pineapple sweetness. It is grown at 1450 meters in the Apaneca Ilamatepec range and consists of the Bourbon and Caturra varietals.

Burundi Kayanza Bwayi
This cup features some of the best aspects of heirloom coffee. A syrupy body and sweetness that is highlighted by notes of raisin and molasses. The cup finishes soft with hints of dried fig and sweet pipe tobacco.

YIRGACHEFFE - Kochere Natural
The mixed heirloom varieties grown near the Kochere mill in the Yirgacheffe district make for a bright and fruity natural processed coffee. Grown between 1950-2400 meters, the coffee is grown by hundreds of small lot farmers and brought to the mill to be processed.

Sumatra Blue Batak
This Sumatran coffee features a peppery pipe tobacco aroma. When brewed, it presents a deep, bitter-sweet chocolate flavor and plum sweetness. It's delicate body fades away with notes of gentle cedar.

B-Ville House Drip
Our Direct Trade House Blend combines Central and South American coffees. An incredibly smooth coffee that has great balance with notes of sweet milk chocolate. The cup has a nice depth and complexity that rounds out with a brown sugar sweetness.

A clean, serene breakfast blend that is soft and sweet. Farm Girl is roasted light and features a light vanilla and caramel tone that comes out in the flavor, rounding out with a refreshingly mild and juicy sweetness.

Flor del Sol
This bourbon variety from Las Ranas Estate is a benefit to the PYSA, and in honor of our former barista. Flor del Sol is only roasted on Mondays. Light roasted and balanced with a juicy sweetness, and notes of Swiss chocolate and caramel.

Gizmo
Gizmo is a versatile blend that lends itself well as a regular brew, or pulled as an espresso. This blend is dark roasted featuring a rich flavor with a heavy mouth feel. Notes of dark chocolate come out with a bold and rich finish. A touch of milk supplements the Gizmo blend well.

John Brown
Our Surly Activist blend: the John Brown blend is a polished coffee with a bold heart, rich character, spicy notes resembling sweet pipe tobacco and dark chocolate with a bittersweet, soft finish.

Old 93 - Moka Java
Our Old '93 Blend is our rendition of the oldest coffee blend in recorded history. Moka Java combines two intense and flavorful opposites to create a homogenous blend with Ethiopian and Sumatran coffees. Our medium roast Moka Java features an intense berrylike acidity from the Ethiopian coffee that blends well with the Sumatran variety to round out with a smooth and earthy body.

Formerly our Rolling Thunder, this blend’s identity is in homage to Jeff's favorite musician Bruce Springsteen. Hearty and smooth, this blend is still “The Boss”.

Ad Astra
We were first inspired to create this blend after watching the symbol of Ad Astra rise and be placed on top of the Kansas State Capitol Building. We only offer one really dark roasted coffee and we wanted to do it right. Bitter Sweet Chocolate, smoke and utterly powerful in the cup. Excellent with milk or an Irish Whiskey.

This unique coffee is decaffeinated using a Mountain Water Process method which ensures that no chemicals are used in the process. One of the purest cups of java you can have, without the jolt.
