The Story

Hacienda La Esmeralda returns to the PT’s Coffee lineup with this beautiful Washed Geisha nanolot. Esmeralda Geishas have earned the highest honors (and auction prices) in the specialty coffee world, and for good reason. These coffees are some of the most challenging to grow and process, but with staggering results.

 

Noria Natural Geisha

The Noria nanolot comes from the Jaramillo farm, located between 5250 to 5900 feet in the mountains of Boquete, Panama. Although the altitude presents challenges for growing and harvesting, the volcanic soil and cool, humid nights bring out the finest qualities of the Geisha variety.

After the cherries have reached an even level of dryness, they are moved to Guardiola mechanical dryers where they rotate for 72 hours to reach an ideal moisture content without fermentation.

Once drying is complete, the coffee beans are mechanically separated from the remaining cherry skin and mucilage.

 

Harvesting

Due to the high premium these Geishas garner during auction, Hacienda La Esmeralda is able to pay it’s harvesters three times the typical wage, ensuring a good standard of living as well as the highest quality work.

By carefully dividing each lot as it is picked, specific clusters of trees are targeted during the harvest, building unique nanolots for the most quality-conscious buyers.

 

Natural Process

During the Natural Process, harvested coffee from the Noria lot goes directly to the patios to dry. For eight hours a day, over a period of 3 to 5 days, the coffee cherries are rotated and evenly dried, infusing the coffee beans with bright, aromatic fruit notes.

 

Drying and Milling

After the cherries have reached an even level of dryness, they are moved to Guardiola mechanical dryers where they rotate for 72 hours to reach an ideal moisture content without fermentation.

Once drying is complete, the coffee beans are mechanically separated from the remaining cherry skin and mucilage.

 

Reposo

Post processing, the coffee is stored in nylon grain bags to rest between 30 and 45 days. This “reposo” period helps to stabilize the enzymes in the bean.

A week prior to shipment, the coffee is hulled to remove the outer parchment layer, then sorted by size, density, and color to create consistent nanolots.

Finally, coffee is vacuum sealed in GrainPro and shipped to the winning bidder.

This delicately roasted Natural Geisha features a honeysuckle and lime zest aroma. When brewed it has a creamy body and balanced acidity. Look for notes of watermelon and rosé wine with a mango sweetness. The finish is warm and comforting with a flavor of bergamot and Swiss chocolate.
